They’re hearty, filling, and incredibly simple to make, making them a fantastic choice for your next RV trip. Easy Quesadillas
Ingredients:
- Flour tortillas (2 per quesadilla)
- Shredded cheddar, pepper jack, or fiesta blend cheese: ½ cup per quesadilla (or more if you like it extra cheesy!)
- Fillings: black beans, canned chicken breast, sliced jalapeno peppers, onions, or any other favorites
- Seasonings: taco seasoning or Ranch seasoning
- Butter
- Toppings: sour cream, salsa

- Nonstick skillet (slightly larger than your tortillas, e.g., 12” skillet for 10” tortillas)
- Spatula
Directions:
- Preheat Your Cooktop: Set your cooktop to medium-low heat.
- Prepare the Tortillas: While it’s heating, lightly butter one side of each tortilla.
- Assemble the Quesadilla: Place one tortilla butter side down in the skillet. Immediately sprinkle cheese over the non-buttered side.
- Add Fillings: Layer on your choice of fillings and a sprinkle of seasonings.
- Top It Off: Place the second tortilla on top, butter side up.
- Cook and Flip: Carefully flip the quesadilla and cook until both sides are golden brown and the cheese is melted.
- Serve: Remove from heat, slice into wedges, and serve with your favorite toppings like sour cream and salsa.
