Pumpkin Spice Pancakes
This recipe is perfect for camping because you pre-mix the dry ingredients and store them in a gallon size food storage bag. When you’re ready to pumpkin spice the heck out of your pancakes, just mix the contents of the bag with a few wet ingredients, whip into a creamy smooth batter, and pour onto a hot griddle!
Dry Ingredients
In a bag, add together:
- 2 cups all purpose flour
- 3 Tbs brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 heaping tsp pumpkin pie spice
- ½ tsp salt
On pancake day, combine the contents of the bag with the following wet ingredients:
- 1 ½ cups milk
- 1 cup canned pumpkin
- 1 egg
- 2 Tbs vegetable oil
- 2 Tbs vinegar
Time out – we see you. Yes, vinegar makes the ingredients list. Why? It combines with the baking soda in the dry ingredients to create a fantastic chemical reaction that helps make your pumpkin spice pancakes fluffy, since the canned pumpkin makes them a little more dense. So don’t leave the vinegar out!
Whisk the batter well, and pour small puddles onto a hot griddle. Cook each side until golden brown, flipping halfway through. Top with butter, chopped pecans (or pecans, depending on how you pronounce it), and maple syrup.
Pumpkin Spice Coffee
Want an at-home recipe for pumpkin spice coffee that couldn’t be easier? Skip the expensive storebought flavored versions and make your own!
Ingredients:
- Regular coffee grounds
- Pumpkin pie spice
- Half and half
Simply add a bit of pumpkin pie spice to your coffee grounds. In your coffee filter, add coffee grounds as usual and then ½ teaspoon of pumpkin pie spice per 6 oz cup of coffee.
Brew the coffee as usual, and top with half and half (or the creamer you prefer).
